Rushed Skirt Steak - FAIL

Oh well, I know better then to try and rush a meal, but got home from work and wanted to grill up some skirt steak and get the lawn cut. So, I lit the OTG and made a quick marinade for the meat (molasses/red wind vinegar/mustard/chili sauce/worcestershire/soy sauce/onions, garlic, S&P). So far so good!!



Got the lawn cut while the OTG heated up and the steaks marinated.

On to the fire with a little Kiawe wood for flavor.



Resting a bit.



Plated up with a little steamed broccoli and onion.



Then the sad truth hits - very tough - good flavor but tough. :(

Oh well, there's always next time!!

I use a bit of lime and orange juice in my marinade, it'll help tenderize them. Also, let them go for a couple hours out of the fridge or like 8 hours in the fridge. Also some cilantro for flavor. :cool:
 
I do the lime too but what I like to use is my tenderizing hammer, point side on them. Then lime for a few minutes nothing else, and then some EVOO and garlic and let marinade for an hour or so.
Then on the grate very hot for about one minute per side. Just a quick outer surface char. Then I slice them on the bias to the grain.
Love em.
And ditto on the style.

Thanks for the style points and tips. I usually have no problem with skirt steak, but I think I was trying to do too many things at once and the short marinating time didn't help either. Sliced across grain for sure. Jimmy, I'll try some lemon and orange juice in the marinade next time, and maybe try a tenderizing hammer like Bill uses. Time to move on to the next cook!!
 
In what other hobby do the mistakes still taste so good? It is fun to try new things on the grill and learn what works and what to not do again. Still, it is a nice looking plate of food.

I would trade my last dinner for that any day! Might have to do a post about it. My resault: Burnt/dry other then that it was just tasteless :mad: Look out for a Fail post by me and you will feel instantly better!
