Rubbing pork butt in advance?

Hey all,

Because of scheduling issues, the only time I have to trim and rub the butt is now (about 6PM EST). It's going in the smoker around 9PM tomorrow night, so that gives it about a day with the rub. I'm planning on VERY tightly wrapping the rubbed butt in plastic wrap and putting it in the fridge.

Any problems with this?

You may also want to apply rub AGAIN just before you drop it on the grates to cook.
I'm starting mine about midnight tonight and I rubbed it yesterday bout 9pm

I do it all the time, but I tend to get some liquid leakage. Like Jim mentioned, I re-rub while I start the fire.

I'm with the Pro's above. A butt is big enough that you won't over season it. You'll actually promote more bark.
Now if it were ribs you might have an issue.

And that is why I use Kevin Kruger's "A Butt Rub (for Jane)"... salt-free. Great stuff!
