Roasted Chili / Garlic Chicken Sausages

Made some chicken sausages this weekend - I've been working up a little recipe and trying to get it dialed in - I'm getting pretty close, I think.

Started out by roasting some peppers then some garlic. Those Fresno chilies pack a little punch!

I boned up a couple packages of legs and thighs and added about 1/2 pound of leaf lard and grinded it up - I guess technically not 'chicken' sausages, but the lard really helps a lot. Afterwards, mixed the meat up with the chilies, garlic, buttermilk powder, parsley, salt and pepper.
