Roasted Chicken Breast with Peach Ginger Salsa

Simple and quick dinner tonight. Chicken rub was kosher salt, dried thyme and pepper, brushed with EVOO and add your rub. On the performer 3-5 minutes direct then indirect until done. Sides was small Yukon potatoes in CIS with EVOO and fresh herbs. Plated with some left over peach ginger salsa I made along with my coleslaw.
