We enjoy roasted beets, acorn squash and sweet potatoes with curry. Why not roast cubed or thick sliced beets on the grill. Their earthy flavor should work well.
Beets are good on the grill when sliced thick. They do give up a lot of moisture. Our small crop should soon be ready to begin harvesting. We had turnip yesterday, it was good but takes a long time. I will give them a head start in the microwave next time.
I tried the roasted beets over the weekend. I peeled them, drizzled with EVOO, seasoned with S&P, and cooked them whole over direct coals for about 45 minutes turning frequently. I let them rest for about 10 minutes and then sliced them for service. They turned out great - thanks for the idea!
