If packed in the ring tightly and not much lit for the mm I can get 12+ hours on mine with a empty foiled pan. If you using water it will burn up quite a bit more.
Do you guys foil the butts at 170, that"s my plan. I have not foiled the last few i cooked
and they were not as tender as when i used to foil and use water in the pan.
i have the clay pot and it works well. However, my butts seem to taste better using water. I know there are all different opinions on this
I seem to hold my target temp better this way.
Clay pot is harder to control on my WSM.
