I have done ribs twice basically the reciepe in the cooking topics section and the best ribs in universe reciepe,
But I see alot of people like to wrap in tin foil and juice em up a few hours in.

I dont mind the first recepie but I saw a comp BBQ on tv and the guy said if u aint wrappin ur losin....are they better??

Daryl,
Taste is subjective and no one person is right. Some like it wrapped, some don't. I personally do not like using foil, others do. Both of us are correct. As for competitions - you cook to please the judges - that's it! I know plenty of cooks that cook a certain way to win a competition, and cook another way in their own backyard to truly enjoy their ribs the way THEY like it!

Daryl,
If you've never foiled, try it. I do both because I'm still experimenting. I find that the foiled ones are definitely more moist. I'd suggest foiling baby backs for no more than an hour. Otherwise, they tend to get way to tender and the meat will tear just taking them out of the foil.

Try foiling half of your rib batch. I spritz mine with apple juice. But, I think the next time I may not spritz them at all because I think that extra steam makes mine a little moister than I care for (although, I've never heard complaints from any of my family or friends). Enjoy!
