ribs, rib racks and rolling ribs

hi everyone,

when you use rib racks, or roll the ribs, do you have to flip the ribs during the cook so the top ends don't get burnt?

I'm used to cooking ribs flat, and never turning, but want to increase the # of racks I can cook at one time.

I often roll, and when they're rolled it's very easy to flip them when you spray, mop or test for doneness. Racks can be good, but I've had issues with the meat sticking to the metal and pulling when I want to turn them.

I use pam on the racks when I use them ! But I normaly only am cooking 6 slabs so they will lay flat on my 22 WSM . I have rolled them racked them and layed them flat ! Never have turned them and have had no diffrence in cooking time flavor or sticking YMMV ! Thou odd I prefer to lay them flat for no good reason .We only cook loin backs from Sams Club I doubt I could lay 6 giant reg spare racks flat even on my 22 thou .I always spray the grates with Pam maybe thats why mine have never had a sticking problem .
