Made St. Louis Style Spare Ribs on the Performer yesterday for the first time. They turned out better than the ones I do on the WSM. I think from now on if I only want to do one rack that the Performer will be the cooker of choice.
I used a mini minion method with about 8 lit coals on top of unlit coals in the charcoal baskets. I then took a foil drip pan and put water in it and put that in the middle of the two charcoal trays. I then put the already rubbed and trimmed ribs in the middle over the water pan. I adjusted the bottom dampers to maintain a 250-275 degree temp at the lid.
It worked perfectly. I kept the dampers open about 25% of the way the entire cook with only slight adjustments once or twice. After 3 hours I put the ribs in foil and back on the grill. I left them in the foil for an hour and then back onto the grill for another hour while basting the ribs the last 10 or so minutes with Dreamland BBQ Sauce. So about 5 hours total.
For one rack of ribs, the performer was easier to setup and more convenient while using a lot less fuel. However, for anything more than one rack, I will probably use the WSM.
