Ribs - mustard based

The wife has book club Saturday and I've decided that's her loss, I'm smoking ribs anyway.

She generally hates mustard, so I normally make wet ribs with a tomato based sauce, but her absence provides me with the opportunity to finally try some ribs with a mustard sauce.

Anyone have a mustard based rib recipe that they recommend?

I've used mustard as a base on butt for years but recently tried it on ribs.

A thin 'translucent' coat of mustard and then dusted with rub. Cooked as normal.
 
For rib sauce, I use Sweet Baby Ray's cut with Apple Juice, 2:1.

It's a bit thin but I don't like the sauce to overpower the meat.

Are you looking for a straight mustard sauce or more of sweet mustard (like honey mustard) style sauce? Either way, I'd wait until the last 15 minutes of smoking to apply the sauce/glaze as mustard loses its flavor with heat.

Here's a sweet version:

South Carolina Mustard Sauce

Adapted from Big Bob Gibson's BBQ Book by Chris Lilly

3/4 cup prepared yellow mustard
1/2 cup honey
1/4 apple cider vinegar
2 tablespoons ketchup
1 tablespoon brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon hot sauce

In a small bowl, combine all of the ingredients and mix well. Make at least 24 hours prior to usage for best flavor.

And here's a traditional mustard Q sauce:

Ingredients:

1 cup prepared yellow mustard
1/2 cup balsamic vinegar
1/3 cup brown sugar
2 tablespoons butter
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon cayenne

Mix all ingredients together and simmer over a low heat for 30 minutes.

I slather my butts and ribs in cheap spicey mustard then add my rub makes for great bark but the mustard taste disapeers completely .
