Forgot to post, but had some family over last weekend for a rib cook. Still trying to get consistancy in my rib cooks.. got 2x 3 packs of spares at Sams, some jalapeno's at Harris Teeter and Fiji apples.. we had a good time and everyone liked the ribs.. (But me)
For whatever reason there were some pockets of fat in the ribs.. I think I should have left them on a tad longer. They were toothpick tender but the temps ran high (on my high heat rib cook) which I think didn't render the fat correctly. Anyhow, I'm gonna keep workin at it.. way I see it, my worst rib is still better than the resterant chain's.
Cooked ABTs, they went like hot cakes, I went to get the camera and came back to what you see... LOL
Smoked some apples for a few hours with candy bars/brown sugar/ice cream.. pretty darn good.
Anyhow, was a fun time all around and was good to have my parents over. I'm so ready for fall though so I can cook and not come in with 100x mosquito bites.. lol.
