Rib Tips

So I bought a couple of racks of spare ribs that I trimmed St. Louis style that I plan on smoking today. What do you all do with the big portion you trim off the back? I know I could smoke them along with the ribs but was wondering if besides smoking is there another way to use the meat?
 
If I had some rib tips, I would smoke em' and put em in with your baked beans, or, braise em' and pull the bones out and make green chili or some other kind of meat sauce/stew. I've never tried this because I normally use baby backs, but it makes sense to me. I think there's a lot of connective tissue in the rib tips, so a long slow cook should work. You could also use a pressure cooker on them.
 
My wife and I actually prefer the rib tips. We cook them along with the spares and end up eating them first! I also set some unseasoned aside to add to sauerkraut.
