Rib Roast in the Refrig... Changed mind about dry aging...

was going to give it a crack, but I don't want to mess with xmas dinner so I'm going to stay away from dry aging this time. My question is, I purchased two standing rib roasts today (Monday) will they be ok in the refrigerator until Thursday, or should I put them in the freezer with the foodsaver?
 
my guess is that they would be, but check with your butcher, the pack date is only on the case.

I've read people wet aging in the cryo for a month. so as long as it hasn't been sitting at your butcher for too long, you should be ok.
