Rib Redemption (higher altitude smoke)

So one year ago I was a kettle jocky and took my kettle and 2 racks of ribs camping. The plan was to show the folks I camp with what real ribs were all about. It was a miserable failure, and still my worst failure to date. The ribs were so dried out and overcooked that they were pretty much inedible.

I have just returned from camping, and this year was all about redemption. The WSM came along this time and the results were incredible! I managed to find some HUGE slabs of baby backs, weighing in at almost 3 lbs each! The smoke took almost 6 hours, but was well worth the effort. I had to battle incredibly dry conditions (VERY low humidity) and I got lucky with wind. (it's usually very windy in the afternoons, but it was just breezy the day of the cook)

Thanks to the suggestions from my failure last year and the rock-solid performance of the WSM, I have achieved Rib Redemption!
