I see people using rib racks rather than placing ribs flat of the grill...is this important?

What Don said more capacity. It's hard to beat the Weber Rib Rack in the WSM. The ribs end up looking like this ))))) when viewed from the top. as the are a little longer than the cirle is wide.

I think the rib rack is a very important tool. When you lay the ribs flat on the grill, the smoke does not flow as well. Also very important, the fat drips off much better when the ribs are on their side <don't forget to turn them over> or hanging , if you're going to make that effort.

The Weber rib rack leans the ribs over about 30 degrees. My contention is that the straighter <upright> the better for uniform smoke and drip.

Much better to use the Weber rib rack than none at all. I've heard that Brinkman makes a more upright rack, I've still to check it out.

Let's face it, you've got to work pretty hard to screw up a smoke on the Weber, it's that good ! but details is what all our fun is about.

Also, Yes you can fit more racks in the Weber when you use racks. As more and more people taste your ribs, you'll find that doing more in one smoke is huge. I've got friends, neigbors and co-workers now begging me for ribs.

Ribs on Saturday? Sounds good! I've got a cryovac of baby backs, 3 slabs, thawing out in the fridge. I'm planning to smoke them on Sunday. I'm planning to follow the BRITU recipe and process for the first time. I'll slice the racks in half and place them in a rib rack on the top shelf. I might even throw a pork loin roast on the bottom shelf and let the ribs drips down on it. I won't take it to pulling temps. Just long enough to get some smoke on it. I'll take the roast out, cut it into thick boneless chops and finsh them on the grill to crisp them up.

Looking forward to 'dem ribs after the NYJets lose on Sunday.

If you run out of time buying the rib rack, one option is to roll them and set them on their side. You can keep them together with skewers or with butcher's twine. (last time I didn't have racks or skewers.) The Sam's standard 3 rib pack fits fine on one grate.

Since payday is today, I plan to finally get those racks and a Brinkman charcoal pan to replace the water pan for overnight cooks.

Thanks again to everyone on this forum. My wife and kids actually think I know what I am doing.
