Rib Cook - Includes Pics

I decided to cook some ribs today as it is my oldest son's favorite dish. He was snowed in in Colorado coming back from skiing and had a hard day at the airport so I thought I would surprise him when he finally got home. I rubbed 3 racks of Baby Backs with the Basic BBQ Rub from Steve Raichlen. Did a full ring with the Nature Glo lump and about 15 Kingsford Briquettes for a Minion start. Used Cherry wood for smoke. Here is a picture of the ribs when I first put them on:



After 2 1/2 hours, I pulled them and wrapped in foil with a little bit of apple juice added in. Threw them back on the smoker for another 1 1/2 hours. Finally, I unwrapped and sauced them. Half of them I used the basic Sweet Baby Rays. For the other half, I made a glaze using some cherry jalapeno jelly and a little bit of apple juice. The first picture are the ones with the jalapeno jelly and the second is with the Rays:






They were awesome. I especially liked the cherry jelly glaze. Not real sweet but a nice level of heat. Served up with some corn and oven roasted potatoes. Everyone liked them.



And no, that's not the son that went skiing in Colorado.

Seems like I always get yelled at when I don't include pics but I did put the warning on the subject heading.

As for the picture size, I forgot to click the button on Imageshack to shrink them down. It did say it will host up to 1.5 meg and these are less than that.

No offense taken at all. As you saw the other day, I am still trying to figure out the pic thing. Does it make sense for me to upload smaller pics?

Imageshack display's an image that fits in your screen and gives you the option to click on it again to see the "actual size" image. So what you're doing is just fine. Only draw back I see is the length of time it takes for the pic to completely download. Even with cable, it takes several seconds even for the resized image because the full sized image is actually being downloaded but the smaller, resized image is being displayed. Personally, I have no problems at all with the size your uploading. It's good to be able to zoom in and see full detail IMO. But, everyone has their own process. I like to resize the pic to something that will fit on a screen set to 1024x768. 800x600 does well but I like to push it to 950 wide. I also adjust, or enhance my pics before uploading them. I use Paint Shop Pro because I got it free way back when and have kept upgrading it. There are better programs out there and several free/shareware programs as well. Or, you can use Imageshack to resize your pic as you suggested but I don't think you can make any other image adjustments with it.

EDIT: Just a note to add ... Most of these programs have a compression ratio that you can set. Jpeg's are already pretty small so don't over compress! If you start seeing ghost lines around your subjects, you're over compressing.

Great Job my friend... I know it says I am new here and am under this name. I was here for two years or so but that was awhile ago. Just got back in Nov from an AD Air Force tour in Iraq after 18 months. Am gonna do my first cook in almost 21 months come tomorrow night. Gonna do ribs early (which we are gonna snack on all night with some beers and whiskey) and follow it up with a brisket smoke...

Robert, great pics, looks great! Your last picture reminded me of a picture I took of my SON. Almost same angle etc. These pictures say it all don't they. Thanks for sharing.

Nice job Robert! I've been wanting to try some cherry glazes on ribs and wings. Wife doesn't care for cherry flavorings though. I'll have to make a single rack for myself next time.
