results of 2nd brisket cook

long time lurker - thought i'd finally start sharing some pics, because i know i've looked at more than my fair share on here. i'm generally a pork-only guy - anyway, i smoked this one last winter. about a 7lb flat with a nice fat cap - from wegman's. much better than my first (which was obviously not worth posting pics of), but still a little tough for my liking. edible none the less.

Hey Ken that looks awesome. I'm doing my 2nd cook this week, and I was shopping for a brisket. The local store has a nice flats packaged. The one I saw today was about 7 lbs with a 1/2 inch fat cap on it. Similiar to yours. How long did that take you?? I had my plan in mind, but I'd like to hear your paticulars for the cook if you could. Thanks.

wegman's? don't think I've ever seen a brisket at a wegman's around here. I'm still looking for a reliable source.
 
I am so intimidated by smoking a brisket, however, after seeing that picture, I am going to "go for it."
I will be seeking your advise though Ken, hope you don't mind. Great job!!
 
Mickey - If I recall correctly it was between 10 and 11 hours with temps between 250 and 270 using the Minion Method with a couple of chunks of oak. Rested 1 hour.

j biesinger - Around here, sometimes Wegman's has them, sometimes they don't. And when they do have them, they're more along the lines of the 3lb variety completely trimmed. Once in a blue moon they will have a bunch of "big" ones like I picked up. Wish it was more consistent.
