resting methods for Pork shoulder

Many use the microwave or the cooler with towels for resting your shoulders.

Does anyone see any advantages or disadvantages to resting in the oven set at say 170 or so (my oven goes reliably down to 150 if that matters)

Thanks for the insights just wanted to get some other opinions or ideas.
 
Depends ...

If you're just doing a 'normal' rest-n-hold (<3 hours), there's no need for heat, so using a microwave/cooler/oven/anything that insulates, is fine.

If you need to hold the meat at serving temps for longer than that, then a warm oven will work.

Either way, you'll need to make sure it's foiled well to retain heat and moisture.
 
Tom,it depends on how long you are holding,like Travis said. Even at 150*,if held too long,will rob any and all moisture out of the meat. I've held for 3 hours in a cooler (the wife was freaking out!). You might want to adjust your start time,if it's going to be held for longer than that. Hope everything turns out okay!

I guarantee if you wrap the meat properly and put it in a good cooler with some crumpled newspaper to take up the empty space it WILL stay hot for 6 hours.
 
I tent it with foil for a half hour. I don't care when it's ready, because that's when I eat.

But the guys are right. Wrapped and in a cooler it will stay hot for hours.
 
I have several of the cheap igloo's but by a good cooler for resting what do you recommend/use?

I have used the coolers successfully for resting for a couple of hours but hate having to throw all the towels into the wash after and was using the oven for convienence but the point is well made I didnt think i'd be draining them of moisture in the oven. They are wrapped in foil but the cook is done. I certianly dont want to continue cooking or lose moisture.
 
Well ... any cooler with good insulation should work, certainly any Igloo or Coleman brand. I use a Coleman 48-quart.

Over in the Kitchen Equipment & Gadgets forum in the Who needs a Cambro? thread, the Coleman Party Stacker was found to be perfect for holding 9x13 pans. They can be found at Target on sale for about $18.

A step up would be the Coleman Xtreme 5-day or Igloo MaxCold coolers but you'll pay about $40~$50 for the 60~70-quart models.

I bought a few towels just for holding. Got them in wild stripes so they wouldn't be confused for bath towels. If I wrapped well with foil there wasn't a need to wash them often.
