Request, Rub for Buckboard bacon?

I have four butts curing and am wondering what you all have used as a rub during the smoke. I have in the past used fresh ground pepper with good success.

Any advice out there on what to rub with? Thanks!

I have never used a rub for buckboard bacon. I have basted it with maple syrup then put fresh cracked black pepper on it, but never a rub in the traditional sense.

I don't see what it would hurt though.
 
Thanks Bruce.. I guess the syrup would be a good baste during the cook. I thought putting it on early would block the smoke.

I'm just wondering what kind of cool "crust" would work well to assist with the second cook while frying...
 
I'm partial to a black/white pepper mix for a rub. Nice counterpoint to the sweetness and is great if you're frying the bacon and planning on making red-eye gravy and biscuits. But terrific for good ol' BLTs too.
