I am planning on doing 6-8 racks of ribs for a family pow-wow this weekend. It's supose to rain on Saturday afternoon and Sunday morning - cooking time. I will have to transport them over to my parents house. They will be off the heat for a couple of hours from the time I pull them to when we would eat at the best. I'm planning on a 6 hour cook just to be safe since the schedules all say 4-5 hours.
Now, if I need to cook them on Saturday morning and then put them in the fridge overnight, how best to reheat them on Sunday? Or should I fight the cold and rain on Sunday morning to serve them "fresher"? I am going to BRITU them, cook them rolled, and then KC+honey sauce them exactly how the site says. If it aint broke.....
