**Red Master-Touch Cajun Bandit**

Thought I'd share some pics and mods from the latest project. I've been using the new Stacker from Cajun Bandit on the Performer and the kettle conversion had been getting neglected, so it got a facelift and a new home.

It will have a BBQ Guru adapter with a kill plug and remote probe eyelets shortly. It is an "N" Master-Touch that I got in a trade for a Redhead 3 vent 22" Silver.
 
Brian, how does the one-touch venting system work with this smoker?
If you posted this grill/smoker before, i must have missed it:rolleyes:did you make those great legs?

Jim- I had been using the center section on the Performer for a couple years, but when Cajun Bandit came out with the Stacker for the WSM/Kettle, I found myself using it more on the Performer than the WSM.

So I got a set of legs from Chris Perres and set out to go Red on the the M-T!

I had another Cajun Bandit that I used in competition for Chicken, Tri-Tip or sides, but sold it when I got another 22" WSM.

So, I feel it has better low temp control using the Happy Cooker/Economy kettle internal ash pans as opposed to just using the One Touch vent, I would find temps not holding steady (dropping) then having to sweep the ashes and temps would eventually overshoot my target. That is the reason for the Guru adapter with a kill plug-just having the options.

If I was using it in the backyard, it wouldn't be a big deal, but at a comp it was a frustration I didn't want. The mods should take care of that.
