Red Lobster Hush Puppies

Red Lobster Hush Puppies

2 cups yellow cornmeal
1 TB. all-purpose flour
1/2 tsp. baking soda
1 tsp. salt
1 egg, beaten
1 cup buttermilk
1/3 cup finely chopped onion
vegetable oil for frying

Mix dry ingredients. Stir remaining ingredients into cornmeal mixture. Pour oil to a depth of 1/2" in a large shallow skillet or electric frying pan. Heat to
400 degrees. Drop mixture by spoonful's (or form into sticks or patties) into heated oil. Fry, turning once, until golden brown. Drain on paper towels. Serve piping hot. Makes 20 hushpuppies
