Last year my wife and I traveled to the USA and spent a couple of months road-trippin' around the country. We covered about 10,000 miles and got to see and taste alot of things! During this trip I fell in love with American BBQ and since getting home I've been trying to recreate the awesome flavors we had over there. This type of food is simply not available back home and it's been a lot of fun spending every other weekend cooking, smoking, making sausages, and BBQing.
I've had alot of success HOWEVER I'm really struggling to recreate any of the BBQ sauces back here.
I have cooked a few random recipes I got off the internet and they were ok ... but not what I found on the tables in the BBQ regions we visited
The only cookbook I've seen that tries to present a list of recipes of quintessential BBQ sauces from the various regions is the Modernist Cuisine. They have the following sauces:
- Southern Carolina
- Northern Carolina (Lexington Style)
- Northern Carolina (Eastern Region)
- East Texas
- Kansas City
- Memphis
- Kentucky
- House BBQ Sauce
My personal favorite is the North Carolina (Eastern Region) sauce... I can't get enough of that hot vinegar. However I'm looking for some variety. Of the above list I've tried making the South Carolina sauce which didn't really go down too well - too much mustard for most of my friends. I then tried the Kentucky but it had too much Bourbon in it and didn't keep very well (kept splitting). And I think I tried either the Memphis or the Kansas (I forget) and it came out OK.
So my question is: Other than in the Modernist Cuisine where can I find some recipes for quintessential BBQ sauces? Searching Google returns a myriad of results with no consensus each recipe I find on the net is some home cooks fave recipe with what seems like a random dump of ingredients. I'm not looking for a random tasty sauce, I'm looking for regional recipes. Surely there is some site or place out there with some authority on the matter. Right now I have a bottle of Sweet Baby Rays but would like to replace it with so genuine homemade BBQ deliciousness.
