I'm ready to try making pulled pork for the first time on my WSM. I only have the standard water pan (I haven't been able to find the Brinkmann anywhere) and am concerned about water running out, etc, with an overnight cook so I'd like to try doing a cook during the day as that way I can keep a better eye on things and make sure there's enough water in the pan.
I'm planning on doing 3 whole butts. I see this "quick cooked" butt recipe that involves smoking like normal until 150-160F, then foiling in order to speed up the process. The author of this recipe cooked 2 butts this way in 7 hours. Does it seem reasonable that if I do 3 butts with this method I could have it done in, say, 11 hours? Thanks.
