Quick Cook Pork Butt

Hi, guys,

I am new to the BBQ world and I want to do a pork butt, but don't have the time to cook all night. I have approximately a 7lb butt and was wondering is it possible to cut in half into 2 3.5lb butts and only have to cook for around 5-6 hours? Your help would be greatly appreciated.

Don't bother cutting it. Start in the morning and run your cooker at 300-325. Foil at an internal of 160-170f, foiling will help speed up the cook. Start checking for tender at an internal of 190 or so. Should be done within your time range.

No problem. If you have the day to do it I'd start it at 7 or 8 am. If your planning on it for supper it is easier to hold a cooked butt in foil and towels in a cooler than it is to speed up a stubborn butt that doesn't want to finish cooking.

Mike, what Bob said. I do a HH butt at about 350, otherwise same as Bob Suggests. Give yourself 4-5 hrs to cook and 2-3 hrs to hold if needed.

I put a 6.5 lb boneless pork butt on this morning at 8:00 am (got up at 7:00 am to prep it). It's been on about 5 hours now and looks great, but I'm going to wait until 6 hrs to check internal temp. The WSM has been locked on 310 degrees since about 8:30 am with NO temp swings (so far). At 165+ degrees, I'll foil and return to WSM for another 2 hrs, then check for temp/tenderness. Most of my HH butts are about 8-9 hours total time (that's from putting it in the WSM to pulled and ready to eat.
