I smoked a roast last night and it was called a sirloin pork roast. what i would like to know is how close is this to a boston pork butt.after it was done i let it rest for 30 minutes and then cut it.Now here is my question it had good flavor, looked good and it wasn't dry but some of it was kind of tough and some of it was real tender is that the way this type of roast is suppose to be like.

"The Complete Meat Cookbook" says that the sirloin pork roast comes from the ham area of the pig, toward the hip; whereas the pork butt (aka Boston butt) comes from the front leg at the shoulder. Two different cuts entirely. The pork butt is more flavorful, but has more internal fat than the sirloin roast. Bruce Aidells recommend brining the sirloin roast, then cooking over indirect heat.

If you cook it much past 140-145* internal
it will be tough. Also need to slice across
the grain.
