Queso

Santa dropped off some new cast iron cookware this morning. I'm thinking about doing some smoked queso in the skillet for a first run. Any ideas? Thinking about doing it like in the croc pot but on the WSM. Wood suggestions?

I'd cook something in my cast iron skillet prior to preparing queso in it. I would utilize hickory or oak wood.
