Pulled Pork/Puff Pastry pinwheels w/pics

Got a birthday party coming up this weekend and I was commissioned to make something bite sized. I have a abundance of frozen pizza dough and was thinking that I could make some P.P. empanada type things. I was thinking that if I rolled the dough out thin and stuffed with a bit of pulled pork and cheese then fold over and bake. Is pizza dough the way to go. I also have several other options available like won-ton/eggroll wrappers, pre-made biscuits, or I could make pie crust. Was planning on serving #5 on the side. Any thoughts on this matter would be awesome.

I have made them with pizza dough, those biscuits in a roll and Bisquick before. I just mixed some bbq sauce, pulled pork and some shredded cheese. Just add enough bbq sauce to bind everything together, if you add too much its gets runny when you bake it and makes a big mess.
 
How about stuffing filo pastry? Freeze bite size portions of the pork and sauce, then stuff the pastry dough and bake. Otherwise, any dough pocket will be harder to stuff.

Puff pastry would be easier to work with than Filo IMO. I'd do several diff ones. Pizza pockets, won-ton rolls, and some puff pastry pockets.

I forgot all about puff pastry. That is the way i'll go. Now as far as cutting and crimping the edges would a ravoli cutter work. If I remember correctly the last time I used that(long ago) you had to work pretty quick.

Here is the link to the apps that John made. I like your idea but I might add some sauted onion and jalapenos to the mix.

Or if you don't want to spice up the stuffing then you could also come up with a chipolte creamy dipping sauce. Just a few more thoughts
 
Last weekend I went in a different direction...PP into lettuce cups with a mango salsa...really was quite good...lots of rave reviews.
 
Well here are the finished results. They were great. Lots of compliments. They were served with #5 sauce. The other stuff in the pics were. Mini calzones, pigs-in-blankets, sausage balls(spicy w/chedder), bruscetta, and deviled eggs. we also had meatballs, vodka rig. and some potato puff things that were still cooking and did not make the pics.

The pinwheels were the pulled pork. After I pulled the butts I chopped a little, mixed with a little finishing sauce then mixed with chedder. Then just made pinwheels with the puff pastry. very easy.
