I've been thinking of doing a smaller butt with a Mexican / Chili rub especially for pulled pork fajitas, enchiladas, etc.!

I guess I'm being a bit of a wiseacher, however, and ask your pardon when I say that I learned this weekend that is no such thing as a pork fajita...or a chicken fajita, either.

Fajita means "little sash" and always refers to flank steak.

BTW, "fajita" means "belts" referring to the skirt steak. We've Americanized all kinds of things.

Right you are...I don't know why I said "flank" steak. I knew it was skirt but somehow when I typed skirt it came out flank.
