Pulled Pork and Chinese Chive Stir Fry

Tonight's meal was pretty quick and simple. Used more of the leftovers from the boston butt I cooked Monday night on the JJ.

Stir fried the pulled pork with Chinese chives. Served with soup and cucumber salad.

Close up. Roasted a clove or two of garlic, added a little bit of oil, tossed in the pork and let it begin to heat up, then added the sweet peppers and Chinese chives to the mix, then folded until cooked.

Soup = Pork, Chinese chives, and bok choy. Salad = Japanese cucumbers, tomatoes, and Thai chilis.

This is an excellent and healthy way to eat those pulled pork leftovers. I really enjoyed the dish.
