Thanks for the compliments, much appreciated! This last weekend I found 4 more chuck roasts at SAM's Club marked down for a quick sale so looks like I get to stock our freezer with much more pulled beef!
It was about 5 1/2 hours at 275º and then did an hour rest. I did this on the BGE because of our North Dakota winters... I do use the Weber kettles and 22.5 WSM often in the spring, summer and fall though!
