Today’s cook will be pulled chicken sandwiches and some Lowcountry Kabobs.
Chickens were brined for 7 hours. One was seasoned with John Henry’s Cilantro Chipotle with Lime
and the other with John Henry’s Sugar Maple. Tied up, put on the roti rod and getting ready to
meet the heat on the Performer.
Chickens put onto the Performer using lump charcoal and 1 chunk of hickory and 1 chunk of
cherry wood.
I was watching an episode of Grate TV and saw them make the kabobs. Since we had everything
on hand we decided to go for it. The only difference from their recipe is that after I parboiled the
potatoes and corn they were put on separate skewers along with the kielbasa. The shrimp will only
take a few minutes on each side so I am doing this to keep from overcooking the Shrimpies.
Kabobs and Shrimp were seasoned with Old Bay Seasoning.
Chicken is done and resting before pulling.
Chicken is pulled.
First bunch put onto the Performer.
First group is done.
Shrimp put onto the Performer.
Dinner is served. Lots of food on the table and I knew there was no way the two of us were going
to eat all that, so we invited my wife’s mom and dad over for dinner.
Here’s your plate! Pulled chicken on Texas toast.
First time doing the pulled chicken and it came out fantastic. This is definitely a different way to
make Low Country Boil and it was really delicious.
