Probe placement for bacon


 
I'm doing my first bacon which consists of roughly 3, 1lb. Pieces of belly. I did one with pepper, one white sugar, and one brown sugar. Two of them were cut in half to fit in the ziplock bags so i have one piece larger than the others. Should i insert the probe into the smaller ones assuming the desired IT will be reached sooner than the larger?
 
Doubt it makes much if any difference. Intuitively, the smaller will cook faster BUT : put it in the smaller and when that hits the mark, put it in the bigger and observe. Adjust accordinly.

Best idea I've ever received: keep a log noting weights, temps and times so you'll know the next time what worked for you based on given situation.
