When in Austin, Tx visiting our new 6 month old grandson, we always pick up prime ribeye and strips 'cause we can't get them at the Fivemile Corner, Ok. This cook started with the old 22.5" kettle.
Here's a shot of the strip before doctorin' and after doctorin'..
The charcoal is Kingsford of course..
The coals are pushed to one side to create a layer at least 3 to 4 layers thick with a pocket to fill with whatever wood is deemed best for the grill; this evening it was mesquite.
The strip is on the grill! Hungry yet? Rustye is; she's lookin' out for intruders.. This is the first turn.
After turning I wanted to increase the charrin' quickly so I cocked the lid slightly open to let a little extra oxygen in to increase the temp...
The strip was moved to the side (without coals) to finish and rest for a few minutes.. My feet restin' while the meat is restin'..
A shot of the portable corral that we just loaded a bunch of steers to go to the feed lot...Hmmmmm you'll enjoy it when you get it!!
The finished product..I don't look for grill lines; I look for grilled...
The plate was almost set....Boomer Sooner!!
The plate was set...
My wife and I share a steak now; one feeds two; is that bein' green?

I really love that 'old kettle' of yours Willie.
Look me up if you ever want to sell it!

Also look me up if you ever want to go even more green, and split one those steaks 3 ways

Fine looking cook!!

The pic of the lid was to give away the age of the grill. Come on down and I'll grill you a piece of beef or whatever anytime..
