T T Bounds TVWBB Super Fan Jul 16, 2011 #3 Vaughan, And I would strongly recommend the reverse sear method: low and slow to just shy of desired temp, and then high heat, in the oven if necessary, for 10 minutes to sear. You'll be glad you did. Good luck.
