Anyone see and have any comments on this week's episode of primal grill. Steven cooked 2 Briskets, 1 whole and 1 flat. Whole one (trimmed very little), for 12 hrs , no foiling while cooking just after on the cutting board for short time. He cooked the whole one to 195 in the thick end, then took it off the smoker. I wunder what the temp was in the thin end ?
Cooked the flat in an Al pan. for 5 hrs.
Have to admit they both looked good. He used a rub with coffee in it.
Any thoughts or comments ?
I'm thinking of cooking a whole brisket maybe this week. Only did it once a while back with marginal results, as I remember.
I'm wondering about putting a chimney of unlit Briquettes in the charcoal basket, and then putting 2 lit chimneys on top of the unlit, add some wood. Leave all the vents open 100%. Lid on, in correct position (not ajar), access door in correct position(closed). Walk away and come back after about 5 hrs, and start checking temps/etc of the meat ? No water in the foiled water pan. I don't think the lid temp will get much more than 350 ish and then if the temps start to fall abit okay. Briskets are cooked at high as well as low temps ? Just cook untill done. any thought/comments ??
