Pre-Igniting Wood Chunks to Add to An Existing Fire - How To?

What's a good way to get additional wood chunks producing smoke before adding them to an existing fire? I anticipate doing a smoke with ribs and chicken thighs which will require different cooking times. Ideally I would like for everything to come off about the same time. The ribs take several hours so they will go on first. I anticipate the chicken thighs taking a couple of hours so I will put them on when the ribs are about 2 hours from being done. I want to insure that when the thighs go on they will get some good smoke but by that long into the cook I don't know that the original chunks of wood will still be producing enough smoke for the chicken thighs so Im thinking I will want to add an additional chunk or two. I think it will be too unpredictable to add wood to the coals at the same time the chicken goes on so I'm thinking of getting the wood ignited ahead of time but getting it past the 'white smoke' stage before adding it to the coals. What's a good way to do that? Ignite a few coals in a chimney with the wood chunks? Any suggestions would be appreciated.

Ken.

Just throw a chunk or two on the coals when adding the chicken. I've done this in the past with no adverse effects. Have the wood just touching a lit coal. FWIW,white smoke doesn't bother me, & it hasn't effected any of my cooks. I like quite a strong smokey flavour, some people not so.

Thanks for the feedback. I may put the chunks in place a little before I put the thighs on just to give them some time to get started.

I don't think you should worry about pre lighting the wood.
I would put the chicken on and open the access door and throw a few smaller chunks or split a big chunk. Make sure the wood is touching lit coals and wait a minute or two until you see them start to burn. Having the door off will get plenty of oxygen to get the wood started.
Or you could always throw the wood on 15 minutes before you put the chicken on.

at the end of the day how ever you do it I don't think it will make much difference.
