50/50 mix of short rib and chuck with a double coarse grind. Heavy salt and pepper with good ol' American Cheese for its melty goodness. 'Gus marinated in EVOO and balsamic vinegar with S&P then finished with some shaved parmesan. Pollo asado later today.
