Had no plans to cook today but it was like 50 degrees so it would have been wrong if I didn't. I grabbed a couple of pork tenderloins and whipped up a honey mustard marinade. Didn't have to much in the house for sides so I had to get creative. We had a bag of mini sweet peppers, I mixed up some cheddar, mozzerella, salami and a little mayo and filled the pepper halves. Spinkled with Emeril's Rib Rub.
Dusted the marinaded tenderloins also with Emeril's Rib Rub and they hit the grill with the peppers. Used a small amount of hickory and apple wood.
Off the grill and resting.
Finished plate with some green beans.
I didn't have a name for the peppers so my daughter called them Pizza Pepper Poppers.
