Pork steak


 
So I did a pork steak tonight. This was about 3/4" thick and about 0.6 lbs. First up is a potato in salt. Took a meatloaf pan filled it with 1/4 salt in the bottom added the potato then filled up half the pan. Covered with aluminum foil and put on the grill for an hour. Then the foil came off and was sprayed with olive oil and Adobo seasoning. Then I marinaded the pork in Moore's marinade leftover from jerky for 30 minutes. Then the pork steak was put on direct for a few minutes on each side.

After moving the pork on indirect I oiled some crookneck squash. They were sprinkled with Emeril's Essence.

Pork steak was awesome and can see why Jim likes them so much. The potato was awesome as well. It was moist all the way through. Usually the bottom gets hard when put directly on the grill or wrapped in foil.
 
Wow - looks great. I love a good pork steak. Usually they are over cooked if you are not careful or the steak is not thick enough.

Never heard of the potato cooking recipe. It speeds up the cooking or just prevents burning on the bottom?

Looks yummy Brian.
Do you mix your own Essence or buy the jar?
I mix my own using Penzey's Spices and it makes the store bought taste like old saw dust.
