Pork Picnic Shoulder on NEW Mini WSM

Got me a Pork Picnic Shoulder and decided to test out the New Mini Build..

Got the Coals all ready... Some Apple wood..



Picnic all rubbed down with a medium spicy pork rub....



Smokin.



Ready to go..



Temp is just PERFECT...



Resting before foil...



Foiled for an hour and left in a cooler ... and split and ready to shred



All shredded and ready for consumption.



Plated and ready....



I was able to keep temp for about 3-4 hrs and the last hour it dropped to about 200..

Great cook on that Picnic. Nice looking Mini. Is that charcoal basket stainless? You can get some funky fumes from galvanize metal and wire when heated.
 
Very nice looking pork. IMHO I would not cook on that thing with that ring you have, find something else, why take a chance.
 
Yeah, I need to get a stainless wire.
You can also use expanded steel....plain, carbon steel like the charcoal grate.

1/4" pencil rod would make a nice top rail and I think that I'd use the original SJ charcoal grate for the bottom.
 
Very nice looking pork. IMHO I would not cook on that thing with that ring you have, find something else, why take a chance.

After some blood shed and some difficult cutting (shears), I have made my basket and will have to secure onto grate via ties or weld... I also made an ash vent as well.. I will have to have some filing off the sharp edges, but I think it went well. I crimped the joints and really fit well..

 
Matthew - good looking pulled pork there. How did you like cooking in the mini? I am in the final stages of my build - waiting for the primer to cure before final painting...
