Greek salad: Greek feta, not mozz (Trader Joe’s sells it), Roma tomatoes, kalmata olives, EVOO, red wine vinegar, oregano and black pepper. First lightly salt and toss the tomatoes and then add all the other ingredients. The salad dressing goes great over the rice. Lots of flavor.
 
Pork loin? Or tenderloin?
This was loin. When I buy them at Costco, I apportion them. This one was about 6-7 inches long. I then freeze the portions and use them per cook.

The method on this recipe is to keep the cubes at around 1” squares. Do an upfront sear then go indirect to 130° and pull.

My skewers are metal so the meat cooks evenly outside and interior.

If you go straight all direct the cubes will dry out quickly.

Marinate for 4 hours or overnight if you can.

Light salt & pepper, evoo, fresh lemon juice and oregano. That’s it.
