pork butt

Well, I smoked my first two butts and first over night cook. It all turned out great with the exception of the smokey flavor. I used wood chips, instead of chunks. I know that's why it did not have much of a smokey flavor. Where can I buy wood chunks? Should I just order it on line?

Walmart will have hickory and mesquite, typically, and some other flavored stuff occasionally-- may vary by season. Academy Sports has quite a bit of grilling and BBQ supplies, and sells pecan, hickory and mesquite in 40# bags of small logs for $10-- a bargain, as well as the usual chunks of hickory and mesquite. We have an Ace Hardware here that sells 1 and 2 pound bags of almost any type of chunk you could want-- apple, cherry, pecan, maple, oak, peach, etc. Any orchards in your area? Most will give trimmings away for free.

I'm in NW/Fl, so you're not far away. You can get hickory chunks at places like HD, Lowes and Academy Sports. You've also got a lot of native pecan in your area and it makes a great smoke wood. Ivan took a lot of trees from one of my fields which had a number of old pecan trees.

Your're right about the chips. They burned too fast and didn't give smoke long enough.

On-line ordering opens up a lot of woods we don't get such as apple, cherry, etc. The cost of the wood isn't bad but the shipping is understandably high.

Enjoy your smoking and it's nice to know there's a kindred spirit not so far away.

Nicole,

Consider asking friends/colleagues at work if they have any fruit trees. Let 'em know you use dried wood for smoking. Last year, a colleague at work gave me a "log" of Peach from a tree he had chopped down months prior. Too bad he had already used the rest for firewood!
