Pork Butt - Why opt for skin on?

I ordered an eight pound pork butt and asked for bone in. Then the butcher asked me if I wanted the skin left on. I asked, do you eat it? And he said no, after cooking you peel it off.

I declined the skin on. Why would some one opt to keep skin on if it just comes off at the end? Wouldn't that eliminate bark and also the flavour of the rub in that area?

For pulled pork you would take the skin off and make cracklings with it. When I get a full shoulder it usually comes partially skinned.

Yes sir = cracklings. If I could get one with skin on that's exactly what I'd do with it. I remember my grandfather cooking cracklings for a snack for when we watched Hee Haw. Hey... those are fond memories of mine! LOL Pickin and Grinnin.
