Hey all,
Ive been smoking ribs, turkeys, salmon, and beer can chicken for a while, and would like to go to the next level. A pork Butt, or a beef brisket. Any advise? These both seem like long smokes. Which one should I try 1st? Does anyone have any advise on preps, and cooking tips?

Do up a Butt. It's a very forgiving piece of meat. Figure 1.5 - 2 hrs per lb for a bone in butt.

I agree. Go with a butt first. Doesn't sound like your other cooks were overnights and a butt is a good way to start for the reasons Bryan gave - forgiving - makes us all look like real Q'masters !

Chris has a very complete section on cooking the butts on the mainsite under "cooking" read, read, ...

I agree with the others....do a butt first.

It'll probably take longer than a brisket (depending on size of course) but great results are much easier achieved.
