Pork Butt - Interesting Discovery


 
I was cooking a Butt for my buddies yesterday and at about 2 hours to kickoff, I realized I wasn't going to get it to 195. So, I decided to throw caution to the wind. I opened up all the dampers 100% and took the WSM up to about 310-320 degrees. The Butt went from 180 to 195 degrees in the span of about 90 minutes. My buddies loved it. It came out perfect.
 
BBQ happens at 300-350, just as it does at 225.
Butts are very easy to cook at any heat.
Done is done, regardless of temps.
Sounds like you had a good cook, but if there are no pics...it didn't happen.

Such are the pitfalls of trying to "just in time" cook a butt.

Most have probably had to restort to an oven to finish off a cook.
