Brined a chicken with salt, honey and bourbon overnight Fri. Air dried until Sunday morning. Put the chicken on my 18" WSM after my pork butt went probe tender at 198 and came off.
Cooked a pork butt overnight and came up to temp about 9am Sunday (this morning). Held the butt in my oven at 150 until triple wrapped while the chicken cooked.
Made a sauce with lemon onion reduction, vinegar, honey with salt pepper and tomato puree.
First real cook on my 18 and am very happy with it.
