Pork Butt 15 lbs

Hello
I just bought a 22.5, and went to Sams for a Butt, I believe it is two pieces (bone in) and the total weight is about 15 pounds

Looking to cook it tomorrow and I want to have it done between 5-7 pm (including 30 min-1 hour rest)

How much time should I plan on cooking?

Each piece of meat is different so it is hard to give an exact time... I would plan on 1 1/2 hours per pound per butt. If they get finished early you can always wrap them in foil and towels and hold them in a cooler for up to four hours. :wsm:
 
Yep. You have two butts that weigh 7.5lb's Go by the individual weight, not the total.
So on the high side figure a 14hr cook.

Have fun and good eatin !!!! Usually about 1.5 hours per lb approx 250... Pork butt a very forgiving meat...
 
I recently did 2 pork butts for a total of about 17lbs. It took about 11 hours total and I kept the WSM's dome thermometer at about 225-235 throughout the cook.

Just did an 11lber few weeks ago took like 13 hours unfoiled. That was a windy day and I ran out of KBB so I had to add more to get the temp back. I would start that dude late at night.
 
I used to plan 2 hours per lb and add 2 hours to the total for 225-250* cooks. Now, I generally cook at a bit higher temp -- more like 250-275* and have been getting more like 1.5 hrs per lb. on butts without foil. These cooks are much less stressful because my cooker seems to like these temps better. I seemed to chase temps and struggled to keep them in the lower range so quit worrying about it.
