I'll go turn it on now. I wasn't concerned once it jumped 30* from 3-4 and it still had two more numbers to go. Its designed to steam so I'll be it gets over 200*.

I had a lid on the entire time. one end had a slice of peg board that allowed me to temp probe different holes.

I'll start a new thread once I start cooking with it. I figured you guys where paying attention here.
 
topped out at 178*.

might be able to get it up a bit more with a bubbler and the lid on tighter.

I'll take it though.
