Long time no posts..
I saw the pork belly brisket thread but when I was on YouTube checking out different cooks etc. my wife saw the burnt ends..
6lb Pork Belly
Rub: Salt, pepper, garlic, onion, mustard
Sauce: brown sugar, butter, honey, bbq sauce
it was windy that day, so it cooked lower than I wanted it to, 200ish for the first 2 hours. Although the chunks of applewood were pretty much gone at that point the smoke ring was a little disappointing.
either way; they came out fantastic. 4 hours on grill, 1.5 hours in foil tray covered. 5 minutes under the summit infrared.
would definitely do this again, try and keep the heat up more and get a better smoke ring.
